The odds of my wife and I both having an easy day on the same day is about as common as a solar eclipse. Well I guess there's going to be an eclipse soon because today was the day where we both had it easy so I decided I would dust off the waffle maker (literally) and make us oatmeal and banana waffles. The recipe was originally designed for pancakes and now I understand why because when I opened the greased (yes, I greased it in case you were wondering) waffle maker, and a couple of the waffles ripped in half.

Despite the mini-catastrophe, I put them back together and they were still delicious. That said, next time I make them, I will definitely make pancakes instead.

Oatmeal and Banana Waffles

Oatmeal and Banana Waffles

- three bananas
- 1/2 cup fat-free milk
- 1/2 tsp vanilla extract
- one cup original oatmeal
- 1/4 cup original oatmeal (this will make sense in a moment)
- 1/2 cup wheat flour
- 1/4 tsp kosher salt
- two tsp baking powder
- two egg whites

Blend bananas and milk in a blender until smooth.

Grind one cup of oatmeal into flour in a food processor.

In a large bowl, thoroughly combine oatmeal flour, oatmeal, wheat flour, salt, and baking powder. Lightly stir banana mixture into bowl until thoroughly combined. Gently add egg whites to mixture until thoroughly combined.

I'm pretty sure you can make waffles or pancakes without me telling you if you're capable of getting this far. If not, write me and I'll post the instructions. :)

Looks good! Franz makes a raisin and cinnamon swirl bread w/out HFCS, it's great for french toast!
