You'd think with this being a recovery week I'd have plenty of time to blog my recipes but I'm actually sitting on a backlog because work has been keeping me busy.
This was a tasty meal but I think it could've used a little more turmeric and possibly something to add a little bite to it. But it will hold its own without any modifications and I found myself sneaking a forkful before I went to bed if that's any indication of how I really felt about it. :)

Turmeric Chicken & Rice
- one pound boneless chicken breasts cut into bite-sized pieces - two cups cooked brown rice - one onion, chopped - one green bell pepper, chopped - 1/2 tsp ground turmeric - 1/3 cup chicken broth - one cup of frozen peas - 1/2 cup manzanilla olives - four cloves of garlic, chopped - two tbsp olive oil
Cook chicken in one tbsp olive over medium-high heat until juices run clear and center is no longer pink. Drain and set aside.
Sauté onion and bell pepper in one tbsp olive oil over medium-high heat for 4 minutes. Add turmeric and continue to cook for one minute. Add chicken broth, peas, olives, and garlic and continue to cook for one minute. Add rice and chicken and continue to cook for one minute or until thoroughly heated.
NOTE: I cooked the brown rice in a rice cooker. I used 2.25 cups of water per one cup of uncooked rice.
