All I can say is... you win some and you lose some. But that's not really fair because it's not like this was a bad meatloaf, it's just that I have high expectations because of my brown sugar meatloaf which is quite tasty.

When I make a meal from a recipe, I like to keep it as original as possible in order to see how it's supposed to taste according to the cook. And as I was reading this recipe, I thought to myself... self... this is going to be a little bit dry. And I was right. It wasn't sand in your mouth dry but it wasn't as moist as my meatloaf.

No Ketchup Meatloaf

When I make this again, and I probably will, I will take half of the tomato paste mixture and stir it into the meatloaf instead of putting the entire mixture on top which appears to just be wasteful.

Please don't let my criticism stop you from making it, especially because I just went into the kitchen and ate a big chunk of it. It's good and it'll probably be even better if you do what I just suggested. :)

No Ketchup Meatloaf

- one package of Jenni-O turkey
- 1.5 cups of diced onion
- one cup of shredded carrots
- one cup of oatmeal
- two egg whites
- one tsp Italian seasoning
- one tsp Italian seasoning (yes, another)
- 1/4 tsp cayenne pepper
- one 6oz can of tomato paste
- two tbsp vinegar
- one garlic clove, minced

Preheat oven to 350F degrees.

In a large bowl, combine turkey, onion, carrots, oatmeal, egg whites, one tsp Italian seasoning, and cayenne pepper. Place turkey mixture into a greased 9" loaf pan.

In a medium bowl, combine tomato paste, vinegar, one tsp Italian seasoning, and garlic. Spread mixture on top of meatloaf and bake for 50 minutes.
