I feel like I'm in a bit of a calorie deficit so I thought I'd cook up some pasta on the eve of a long run. At first glance you might think this sounds a bit odd but the sweet and sour combination of the ingredients blend well together. In fact, I found myself back in the kitchen a few moments ago spooning a mouthful straight from the bowl into my mouth. :)

Penne with Tomatoes and Feta

Penne with Tomatoes and Feta

- one box of whole grain penne pasta (about 13.5oz)
- four cups of grape tomatoes, halved
- two cups of seedless green grapes, halved
- 1/3 cup of fresh basil leaves, thinly sliced
- two tbsp white balsamic vinegar
- two tbsp olive oil
- two tsp Dijon mustard
- one tsp minced garlic
- 1/4 tsp ground black pepper
- one 3.5oz package of low-fat feta cheese

Cook pasta according to instructions.

In a large bowl, combine pasta, tomatoes, grapes, and basil.

In a separate bowl, whisk together vinegar, olive oil, mustard, garlic, and black pepper. Drizzle over pasta, top with feta, and toss to combine.

They were throwing me off too. My wifea and I both thought they added a nice flavor. I think it'll be fine without them or you could just keep them on the side.
