Penne with Tomatoes and Feta |

I feel like I'm in a bit of a calorie deficit so I thought I'd cook up some pasta on the eve of a long run. At first glance you might think this sounds a bit odd but the sweet and sour combination of the ingredients blend well together. In fact, I found myself back in the kitchen a few moments ago spooning a mouthful straight from the bowl into my mouth. :)

Penne with Tomatoes and Feta
- one box of whole grain penne pasta (about 13.5oz) - four cups of grape tomatoes, halved - two cups of seedless green grapes, halved - 1/3 cup of fresh basil leaves, thinly sliced - two tbsp white balsamic vinegar - two tbsp olive oil - two tsp Dijon mustard - one tsp minced garlic - 1/4 tsp ground black pepper - one 3.5oz package of low-fat feta cheese
Cook pasta according to instructions.
In a large bowl, combine pasta, tomatoes, grapes, and basil.
In a separate bowl, whisk together vinegar, olive oil, mustard, garlic, and black pepper. Drizzle over pasta, top with feta, and toss to combine.
