This was a sort of last minute throw together. I didn't even have spaghetti in the cabinet so I used up two different types of pasta in order to free up space.
As I'm sitting here typing this, I just realized that I've never made meatballs. Or at least not that I can recall which means if I did, it was a long time ago. But I really think this is the first time. Anyway.

I'm not even sure why I made them, it just seemed like the thing to do and yet meatballs bring back fond memories of being a kid. I loved meatballs! How can you NOT love meatballs? I mean really... they are balls of meat... how cool is that?
I think one of the reasons I've never made them is that I just assumed they were fried which would require the cook (aka Me) to stand over them diligently. But then it occurred to me -- I bet I could broil them which would only require me to revisit them once during the process to turn them over. Presto! Or is it Prego? Prego! Hmmm... Pronto! No, that's how you answer the phone. Crap. Mi dispiace, mi Italiano non e molto bene.
Pasta with Meatballs
- spaghetti or some sort of pasta - one cup of chopped onion - three garlic cloves, chopped - two tbsp tomato paste - one 14oz can of low-sodium beef broth - two 14oz cans of diced tomatoes, undrained - 2oz of bread crumbs (garlic and herb or Italian) - one package of Jenni-O extra-lean ground turkey - one tsp dried oregano - one tsp dried basil - 1/4 tsp ground black pepper - one egg white - one tbsp olive oil
Preheat broiler.
Saute onions in one tbsp olive oil over medium-high heat for three minutes. Add garlic and continue to cook for one minute. Add tomato paste and continue to cook for one minute. Add broth and continue to cook for 4 minutes. Add diced tomatoes, lower heat, and continue to simmer for 30 minutes.
In a large bowl thoroughly combine bread crumbs, turkey, oregano, basil, pepper, and egg white. Form into 1.5" balls and place on a greased baking sheet. Broil for 15 minutes turning once. Add meatballs to sauce. (If your timing is right, you'll have about 10-15 minutes remaining on the simmering.)
Cook pasta according to instructions. Serve meatballs and sauce over pasta.
