I got back from a week of travelling and I'm 4 pounds heavier than I was when I left. I guess the lack of activity while recovering from the race is the obvious culprit but I'm finding the weight gain to a bit troubling. Oh you know me, if I'm not obsessing about something, I probably wouldn't be able to exist.
The truth is -- it's only a minor concern because I realize that while I was travelling, I didn't have a kitchen at my disposal but now that I'm back, I am back on the plan. For the next week or so, I'll keep an eye on the type of food I'm eating in order to cleanse my body and replenish it with my standard list of fruits and veggies.

While pondering dinner last night, I decided that a big fat salad was probably best. I came up with a spin on a dressing which in total is no more than 100 calories for the entire bowl. The original recipe included low-fat sour cream which I always switch to fat-free plain yogurt. By doing so, I significantly reduce the calories while only changing the taste slightly.
I would've preferred to use romaine lettuce but my local grocery store seems to be pushing bad produce these days. The spinach was an ok substitute but I think it's a little too course and changes the overall flavor of the salad. Despite the last minute substitution, I think the dressing was a success and I definitely try this one again.
Chipotle Dressing
- 2/3 cup of fat-free plain yogurt - one tbsp of minced chipotle chile in adobo sauce - one tsp ground cumin - one tsp chili powder - 4 tsp fresh squeezed lime juice
Salad
- romaine lettuce - boneless chicken breasts, cut into bite-sized pieces - cherry tomatoes, halved - purple onion, thinly sliced - black beans, drained and rinsed - corn, drained and rinsed
For the dressing, add all of the ingredients to a bowl and thoroughly combine.
I like my salads with lots of "stuff" so I left the quantities out because I think that's a preference. For reference, I used a 9oz package of lettuce, two chicken breasts (baked @ 350F for 22 minutes), one package of tomatoes, one onion, one can of beans, and one can of corn. That was enough for my wife and I with some leftover but not much.
Mix the salad and the dressing and that's it.
