I got another opportunity to use my fancy rice cooker. I can't believe that I used to make rice in a pot. I was in the middle of doing a trainer session when I hopped off, threw the rice in the cooker, and jumped back on while it was doing the work. It doesn't get any better than that. :)
This is fairly simple to make and was quite tasty although I think I might add chicken on my next attempt. What can I say? Not really much to add, it's something new although I feel like I've made something similar in the past. I'm feeling lazy this morning or else I'd do a search. Given the limited number of ingredients I use and the large number of recipes I've cooked, I'm certain there's something similar.

Brown Rice & Tomato Salad
- one cup of brown rice, uncooked - 1/4 cup of rice vinegar - two tsp brown sugar - one tbsp olive oil - 1/4 tsp ground black pepper - three large tomatoes, seeded and diced - one cup of basil leaves, chopped
Cook rice according to instructions and move to a large bowl.
In a small bowl, combine vinegar, brown sugar, olive oil and pepper. Pour over rice, add tomatoes and basil, and thoroughly combine. Serve at room temperature.
