After opening our presents on Christmas morning, my wife looked at me and asked if we are having pancakes for breakfast. The tone of her voice implied she had already put in this request prior but she and I both knew she had not. I did a mental search in the kitchen for the appropriate items required for making pancakes and then replied: "Yes, we are having pancakes for breakfast."
I guess you could purchase a box of Bisquick or some other premade pancake mix but making your own is just as simple. I've been guilty of the above but controlling the ingredients going into my meals is becoming more of a priority.

Simple Pancakes
- 1.5 cups of whole wheat flour - 3.5 tsp baking powder - one tsp salt - one tbsp brown sugar - 1.25 cups of fat-free milk - one egg - three tbsp olive oil
In a large bowl, thoroughly combine flour, baking powder, brown sugar, and salt. Clear out the center of the mixture and pour in the egg and oil. Mix until smooth.
Do I need to explain the process of making pancakes? Really? Pour approximately 1/4 cup of the batter into a greased pan and cook over medium high heat until small bubbles form in the surface and the edges are slightly firm. Flip and continue to cook for approximately one minute or less.
