In an effort to reclaim wasted time in my week, I've decided to shop for more than one day at a time.  I know what you're thinking.  You're thinking... now way... really... you're going to be like normal people and shop for several meals at once?!?!  [gasp]  Yes, I am!

It's pathetic.  I just can't think more than one day ahead when I'm in the grocery store so I end up buying groceries almost every day.  I've got it down to a science and I can get in and out in just a few minutes but I would like to change my routine and save that 15-30 minutes per day and only go to the grocery store twice a week.  Ok, maybe three times.  (Four max.)  And yes, it's a New Year's resolution thing.

Turkey Meatloaf

The above has nothing to do with turkey meatloaf.  Obviously.  Anyway.  Turkey meatloaf is becoming like chili where I now have more variations floating around in my head than I have brain cells.

The other day while consolidating my grocery shopping, I picked up a few items for this recipe and thought I would make up the rest.  As I was standing in the kitchen preparing this last night, I was like a mad scientist combining the ingredients for this concoction while laughing maniacally out loud.

All kidding aside, this is the best turkey meatloaf to date.  It has good flavor, it looks good (which is not usually the case with turkey meatloaf), it was moist but not mushy, it was everything I wanted in a rectangular shaped meat block. :)  Yum!

Frankenstein's Turkey Meatloaf

- one package of Jenni-O extra-lean ground turkey
- 1/4 cup of brown sugar
- 1/2 cup of organic ketchup
- two egg whites
- one cup of chopped onion
- one cup of chopped bell pepper
- 3/4 cup of Kellog's corn flake crumbs
- one tbsp Worcestershire
- one tbsp Italian seasoning
- 1/4 tsp ground black pepper
- one tsp ground mustard

Preheat oven to 350F degrees.

In a large bowl, thoroughly combine all of the ingredients.  Press into a greased loaf pan and bake for one hour.
