I've been trying to stick to my plan of shopping less times per week. I've been doing ok but I had to make something up out of my head because I had a package of turkey meat, some veggies but didn't have a recipe. I did end up at the store yesterday but that's because I ran out of salad. All in all, I'm going ok but my plan needs work.
This was delicious. I just some for lunch and the only thing I would add is cayenne pepper. They say as men get older they lose their sense of taste and that is why they frequently use pepper. I must be old. :( Oh well.
Last Minute Turkey Casserole
- one package of Jenni-O extra-lean turkey
- 6oz uncooked whole wheat spaghetti, break into thirds
- one onion, chopped
- one green bell pepper, chopped
- one red bell pepper, chopped
- three garlic cloves, chopped
- six crimini mushrooms, sliced
- two cans of diced tomatoes, drained
- one can of corn, drained and rinsed
- 1/4 tsp ground black pepper
- one tsp basil
- one tbsp Italian seasoning
- one 8oz package of reduced-fat cheddar cheese
- two tbsp olive oil
Preheat oven to 350F degrees.
Cook pasta according to instructions.
In a stockpot, brown turkey meat in one tbsp olive oil over medium-high heat. Drain and set aside.
In a stockpot, sauté onions and bell pepper in one tbsp olive oil over medium-high heat for 5 minutes. Add garlic, mushrooms, pepper, basil and Italian seasoning. Continue to cook for one minute. Add tomatoes, corn, 4oz cheese (half), turkey meat and pasta. Thoroughly combine and transfer to a greased 9x13 baking dish. Top with remaining cheese and bake for 30 minutes.
