I'm now entering the second week of my experiment of shopping for more than one day.  So far so good but I've had a few hiccups. 

I spent nearly $100 at the grocery store yesterday buying mostly fruits and veggies but I'm still shopping without recipes in mind so it'll be interesting to see how creative I can get with the ingredients I've purchased.  I'm also curious to see if I start wasting food.  That would be bad.

In addition to changing my shopping habits, I'm also attempting to cook bigger meals in order to bring my lunch more often.  And nothing says leftovers like a big pot of chili.  It's kind of tough to call it chili when there isn't any chili powder in it but calling it bean stew just seems silly.

YACR (Yet Another Chili Recipe)

Considering I just threw a bunch of stuff in the pot, this was surprisingly delicious.  This meal was my attempt at using some of the veggies I had from my previous shopping expedition and it worked out well.

YACR (Yet Another Chili Recipe)

- three celery stalks, sliced
- one onion, chopped
- one green bell pepper, chopped
- three garlic cloves, chopped
- two small zucchini, cubed
- one tbsp ground cumin
- one tsp paprika
- 1/4 tsp cayenne pepper
- two cans of diced tomatoes, undrained
- one can of red kidney beans, drained and rinsed
- one can of white kidney beans, drained and rinsed
- one can of black beans, drained and rinsed
- one can of chicken broth
- one can of diced green chiles, undrained
- one can of corn, drained and rinsed
- one tbsp olive oil

In a stockpot, sauté onions, bell pepper, and celery in one tbsp olive oil over medium-high heat for three minutes.  Add cumin, paprika, cayenne pepper, garlic and zucchini.  Continue to cook for three minutes.  Add tomatoes, red kidney beans, white kidney beans, black beans, chicken broth, green chiles, and corn.  Bring to a boil, reduce heat and simmer for 30 minutes.
