Ok, the truth is that when I got home from the store, I realized I already had a package of turkey in the refrigerator from my last shopping expedition. I decided to cook two meals, one to eat and one for snacking, lunch or both. This meatloaf was in the latter category.
I came across a recipe that had cottage cheese and my initial reaction was less than enthusiastic. It just sounds weird. In fact, when I told my wife, she made a face but we both changed our tune once we tasted it. Although this particular combination which I threw together out of my head was lacking a bit of flavor, I think the next iteration will be quite tasty.

The recipe below would be good for meatloaf sandwiches but I'd consider throwing in something to spice it up. That said, it's almost completely gone so I don't think we're too dissatisfied.
Cottage Cheese Turkey Meatloaf
- one package of Jenni-O extra-lean ground turkey - one cup of chopped onion - one cup of chopped green bell pepper - one cup of low-fat cottage cheese - 1/2 cup of cooking oats - 1/4 cup of ketchup - one egg, lightly beaten - one tbsp mustard powder
Preheat oven to 350F degrees.
In a large bowl, thoroughly combine all of the ingredients. Press into a greased loaf pan and bake for one hour.
P.S. A small confession: I forgot to take the picture when I pulled it out of the oven so the picture above is cold. Looks pretty bad -- tastes pretty good though.
