I'm running out of names. It's sad. Anyway. I've got a meal cooking in the slow cooker but that's for lunch. I still have dinner to prepare and needed to clean out the fridge. When I looked to see what remained, I had a package of Jenni-O turkey and some veggies. The outcome...

Sunday Night Turkey Casserole
- one package of Jenni-O extra-lean ground turkey - one cup of purple onion, chopped - one red bell pepper, chopped - 4oz baby spinach - three garlic cloves, diced - two cans of diced tomatoes, drained - one can of corn, drained and rinsed - 1/2 can of black beans, drained and rinsed - one tsp dried basil - one tbsp Italian seasoning - one 8oz package of reduced-fat four cheese Mexican - two tbsp olive oil
Preheat oven to 350F degrees.
In a stockpot, brown turkey in one tbsp olive oil over medium-high heat. Drain and set aside.
In a stockpot, sauté onions and bell pepper in one tbsp olive oil over medium-high heat for three minutes. Add spinach, garlic, basil and Italian seasoning. Continue to cook for two minutes or until spinach is wilted. Remove from heat.
Add tomatoes, 4oz cheese (half), turkey, corn, and black beans. Thoroughly combine and transfer to a 9x13 baking dish. Top with remaining cheese and bake for 30 minutes.
