I was looking for a tasty but healthy meal to cook for Valentines Day and I found a stuffed salmon recipe that looked delicious.  I opted for cottage cheese instead of using ricotta which seems to be a good substitute as long as there are other flavors to complement it.

This meal was fairly easy to make except that I nearly destroyed the salmon attempting to butterfly it.  I asked the butcher for a thick fillet but it was somewhat tapered which made it quite difficult to slice it in half.  I succeeded (barely)!

- one pound salmon fillet

- 1/2 cup of cottage cheese
- 1/2 cup of crumbled feta cheese
- 1/2 tbsp of Dijon mustard
- 1/2 cup of baby spinach
- 1/4 tsp dill weed
- 1/4 tsp dried oregano
- ground black pepper

Preheat oven to the 450F degrees.


In a bowl, combine cottage cheese and feta, smashing until well blended.


Butterfly salmon fillet and lay it out flat on a cutting board.  Spread Dijon mustard on the insides and cover one side of the salmon with half of the spinach leaves.  Cover the spinach with the cheese mixture, spreading evenly.  Pepper to taste.  Cover the cheese mixture with the remaining spinach and close the fillet.  Sprinkle the top of the salmon with dill and oregano.


Bake on a greased baking dish for 20 minutes.
