There's been an increased amount of talk regarding the paleo diet lately which has me looking into the amount of carbohydrates in my meals. I am obsessive-compulsive by nature so what I really need is something else to obsess about.
While this recipe contains dairy in the form of cheese, I think it would be considered a much better meal than if I had a little bit of pasta or rice to go along with it. Feel free to add it; you're probably much more of a normal person than I am. :) Regardless of what you add, this dish was very tasty on its own.

Sausage and Veggies
- one package of Jennie-O spicy turkey sausage - two red bell peppers, chopped thick - one purple onion, chopped thick - four heads of broccoli, sliced thick - four crimini mushrooms, sliced - three garlic cloves, diced - two cans of diced tomatoes, drained - one tbsp Italian seasoning - one tsp dried basil - two tbsp olive oil - parmesan cheese, grated (optional) - crushed red pepper flakes (optional)
In a stockpot, cook turkey in one tbsp olive oil over medium-high heat until no longer pink and juices run clear. Drain and set aside.
In a stockpot, sauté bell peppers, onion, and broccoli in one tbsp olive oil over medium-high heat for 6 minutes. Add mushrooms, garlic, Italian seasoning and basil; continue to cook for one minute. Add tomatoes, bring to a simmer and continue cooking for 8 minutes. Add sausage and continue to cook for two minutes.
Serve with parmesan and crushed red pepper flakes.
