This was another attempt at creating a salad dressing. I think this mixture tastes better in the bowl than it does on the salad. It has a nice flavor and the ingredients compliment each other well but I either didn't use enough on my salad or it blends into the salad too well. In either case, I opted for another dressing on my return for a second helping.
You could peel the cucumber before blending it but the skin adds fiber and I believe it also has some nutrients. Some people find it to be somewhat bitter but I rarely peel it and eat cucumbers often. I did not notice it in the dressing and I would suggest leaving the skin.

Cucumber Dill Dressing
- one cup of diced cucumber - 6oz plain nonfat yogurt - one tbsp dried dill weed - one tbsp brown sugar - juice from one fresh squeezed lemon - 1/4 tsp ground black pepper
Place all of the above in a food processor, blend until smooth.
