I wonder if I have as many meatloaf variations as I do chili recipes? Hmmm. This version was tasty and very moist. I think I could do more to this in the future but I haven't figured out what just yet. I'm leaning towards more of a tomato flavor like with a few tbsp of tomato paste.

The veggies you see on the plate were grilled in a grilling basket. I followed the recipe in this previous blog entry...
BBQ Extravaganza
Quinoa Turkey Meatloaf
- one package of Jennie-O extra-lean ground turkey - 3/4 cup of cooked quinoa - one cup of finely chopped onion - one cup of shredded carrots (about one carrot) - one cup of shredded yellow squash (about one squash) - three garlic cloves, chopped - two tbsp organic ketchup - one tbsp low-sodium soy sauce - 1/4 tsp fresh ground black pepper - 1/2 tsp dried oregano - 1/2 tsp dried thyme - two egg whites
Preheat oven to 350F degrees.
Thoroughly combine all of the above ingredients in a large bowl and press into a greased loaf pan. Bake for one hour.
