I had this great idea that I'd make an Italian style meatloaf. In my head, it was delicious. I set out to create said meatloaf in the kitchen and I decided I would throw a wildcard into the experiment by using bran instead of bread crumbs.
The result was an "ok" meatloaf. I think I know where I went wrong and I'm going to use this as my starting point. In my next attempt, I will add another 1/2 cup of cheese and 1/2 cup of tomato sauce.

Italian Turkey Meatloaf Experiment
- one package of Jennie-O extra-lean ground turkey - one cup of chopped onion - one cup of chopped bell pepper - one cup of grated zucchini - one 6oz can of tomato paste - 1/4 tsp black pepper - one tbsp Italian seasoning - 1/2 cup of part skim mozzarella - 1/2 cup of whole wheat bran
Preheat oven to 350F degrees.
In a large bowl, thoroughly combine all of the above. Place in a greased loaf pan and bake for one hour.
